Marinade: ¾ cup plain Greek yogurt (2% or higher) ¼ cup olive oil 3 cloves garlic, minced 1 tsp rosemary or thyme 1 tsp dried oregano ½ tsp ground cumin 1 tsp kosher salt ½ tsp black pepper Zest of 1 lemon Cut 2 pounds of boneless, skinless chicken into bite-sized pieces and toss with the marinade. Refrigerate for at least 2 hours (overnight is even better). Thread onto skewers and grill over medium-high heat for 8–10 minutes, turning halfway, until the chicken reaches 165°F.
