  Moving Beyond POF: The Science and Control of Phenols

How is it that yeast can take flavourless grain precursors and transform them into complex aromas like cloves, baking spice, wood smoke, barnyard, or even band-aids? As it turns out, the traditional "POF+ vs. POF-" industry label is a massive oversimplification. Phenol production is a highly tunable spectrum.
