Lucas and Luna dissect the daily realities of running a restaurant, from independent pizzerias to multi-unit hospitality groups. Each episode picks one operator's margin sheet or a single P&L line item — labor cost, food waste, third-party delivery fees — and builds a conversation around what the numbers actually mean. Lucas, a former line cook turned business journalist, brings the kitchen-floor tension; Luna, a hospitality consultant, reads the same data as a balance-sheet puzzle. They talk about lease negotiations, tip-pooling mechanics, menu engineering, and why a 4% drop in same-store sales can kill a months-long expansion plan. The show is for owners, chefs, and anyone who thinks a restaurant is just about the food. No hot takes, no listicles — just two people who've seen the back office and the walk-in cooler, asking: what does it take to survive in an industry where 60% of margins vanish before the first plate leaves the pass?#RestaurantBusiness #FoodService #HospitalityIndust

How Restaurant Noise Levels Shape the Guest Experience
Aug 18, 202612 minS4
In this episode of Restaurant Business with Fexingo, Lucas and Luna dive into the science of sound in restaurants. Why are some dining rooms booming while others feel dead? They explore how acoustics — from ceiling materials to table spacing — affect guest satisfaction, dwell time, and even spend. With a recent study showing that a five-decibel drop can increase perceived food quality by fifteen percent, the hosts unpack how operators can tune their spaces for profit. They also look at the rise of 'quiet dining' as a differentiator, the financial trade-offs of acoustic treatments, and why some chains are embracing the buzz. Packed with practical takeaways for independent operators, this episode reveals why the sound of your restaurant is as important as the taste of your food. #RestaurantAcoustics #DiningRoomSound #GuestExperience #RestaurantDesign #QuietDining #NoiseLevels #HospitalityIndustry #FoodService #IndependentOperators #RestaurantRevenue #CustomerSatisfaction #AcousticTreatment #RestaurantAmbience #LucasAndLuna #FexingoBusiness #BusinessPodcast #RestaurantBusiness #PodcastEpisode Keep every episode free: buymeacoffee.com/fexingo
Menu prices are more science than guesswork. In this episode, Lucas and Luna unpack the psychology and arithmetic behind pricing, from charm pricing to the decoy effect, and why a $19 pasta outsells a $21 one. They walk through real-world examples like the $9.50 burger trick and the Goldilocks principle of menu tiers, and explain how a small change in price presentation can lift margins without changing a single ingredient. If you've ever wondered why your favorite dish costs $18.95 instead of $19, this episode reveals the thinking—and the data—behind the numbers. #MenuPricing #RestaurantBusiness #PricingPsychology #CharmPricing #DecoyEffect #MenuEngineering #Hospitality #FoodService #IndependentOperators #RevenueManagement #Business #FexingoBusiness #BusinessPodcast #Podcast #PricingStrategy #ConsumerBehavior #RestaurantMarketing #ProfitMargins Keep every episode free: buymeacoffee.com/fexingo
High turnover has been a constant in the restaurant industry, but new strategies are finally pushing the needle. In this episode, we explore the shift from punitive scheduling to apps that let staff swap shifts, the rise of guaranteed weekly minimums, and a four-day workweek experiment at a Chicago bistro that cut kitchen churn by half. We break down the math behind retention versus recruitment costs, the role of transparent tip pooling, and how ownership can make or break a server's loyalty. If you run a restaurant or work in one, you'll hear why the old assumptions about turnover are being challenged—and what's actually working on the ground. #RestaurantStaffing #ServerTurnover #RestaurantBusiness #Hospitality #IndependentOperators #EmployeeRetention #ShiftScheduling #FourDayWorkweek #TipPooling #RestaurantCulture #KitchenStaff #StaffTraining #Recruitment #Business #FexingoBusiness #BusinessPodcast #FoodService #RestaurantManagement Keep every episode free: buymeacoffee.com/fexingo
Why Restaurant Wine Markups Are Falling as Margins Rise
Aug 15, 20268 minS4
In this episode of Restaurant Business with Fexingo, Lucas and Luna explore a surprising shift in how independent restaurants price wine. While the classic 300 percent markup is fading, operators are discovering that lower markups on bottled wine can actually boost overall profitability. They break down the math behind a $40 bottle of wine sold for $70 versus $120, showing how a smaller margin on wine drives higher spend on food and desserts. They also discuss the rise of by-the-glass programs, the psychology of perceived value, and why sommeliers are rethinking their approach. With concrete examples and practical takeaways, this episode offers a fresh perspective on a key revenue stream for restaurants. Tune in to learn how adjusting your wine pricing strategy could increase guest satisfaction and your bottom line. #WineMarkups #RestaurantPricing #IndependentRestaurants #RestaurantRevenue #WineProgram #Sommelier #ByTheGlass #PerceivedValue #RestaurantMargins #FoodAndBeverage #HospitalityIndustry #WineSales #RestaurantBusiness #FexingoBusiness #BusinessPodcast #RestaurantStrategy #WineList #RevenueManagement Keep every episode free: buymeacoffee.com/fexingo
In this episode of Restaurant Business with Fexingo, Lucas and Luna dig into a small but revealing change sweeping the industry: charging for extra sauce. From the economics of condiment theft to the psychology of perceived value, they explore why a fifty-cent charge for a ramekin of ranch can boost margins and cut waste. They look at a specific case — a Kansas City barbecue joint that added a 50-cent sauce surcharge and saw a 12 percent drop in sauce costs without losing customers. They also examine the risks: backlash, tipping norms, and the fine line between charging for waste and nickel-and-diming your guests. If you've ever wondered why your favorite wing spot now charges for blue cheese, this episode breaks down the math and the strategy behind it. Lucas and Luna also discuss how to implement such a charge without alienating your regulars, and why some operators are using charity tie-ins to soften the blow. Tune in for a practical look at a tiny price change with big implications for independent restaurants. #RestaurantBusiness #SauceSurcharge #CondimentEconomics #FoodService #Hospitality #IndependentRestaurants #RestaurantMargins #MenuPricing #CustomerPsychology #FoodCosts #Barbecue #KansasCity #RestaurantStrategy #Business #FexingoBusiness #BusinessPodcast #FoodIndustryTrends #RestaurantRevenue Keep every episode free: buymeacoffee.com/fexingo
